Roast level is one of the most misunderstood things in coffee. It's often treated as a simple spectrum from mild to strong — but that's not quite right. Roast level is really about flavour character: how much of the bean's original origin flavours come through versus how much the roasting process itself shapes the cup.
At Kos Coffee, our four roasts each sit in a different place on that spectrum. Here's how to think about them — and how to find the one that's right for you.
What Roast Level Actually Means
When coffee is roasted, heat transforms the green bean. Early in the roast, the bean develops sugars and acids that produce bright, complex, fruit-forward flavours. The longer it roasts, the more those original characteristics give way to deeper, darker, roast-driven flavours — chocolate, caramel, smoke.
So a light roast isn't weaker — it actually has more caffeine and more of the bean's original character. A dark roast isn't stronger in caffeine, but it is bolder and more uniform in flavour. Neither is better. They're just different.
Our Roasts, Explained
First Light — Light Roast
First Light is our lightest roast — the one that stays closest to the origin of the bean. Expect brightness, clarity, and complexity. You might notice floral or fruit notes, a lighter body, and a clean finish. It's the roast for people who want to taste where the coffee came from.
Best brewed with: pour-over. The clarity of the method matches the clarity of the roast.
Gather — Medium Roast
Gather is our most approachable roast — balanced, smooth, and versatile. It sits in the middle of the spectrum, with enough brightness to be interesting and enough body to feel satisfying. It's the roast that works for almost everyone and almost every method.
Best brewed with: pour-over or French press. It adapts well to both.
Still Hour — Medium-Dark Roast
Still Hour moves deeper into the roast. The brightness softens, the body fills out, and the flavours become richer and more layered — think dark fruit, cocoa, and a longer finish. It's a quieter, more contemplative cup. The kind you sit with.
Best brewed with: French press. The immersion method suits its depth.
The Draw — Dark Roast
The Draw is our boldest roast. Full-bodied, intense, and unapologetically dark. The roast character is front and centre — rich, smoky, with a heavy finish. If you take your coffee black and want it to mean something, this is the one.
Best brewed with: French press. It holds up to the method's weight and produces a cup with real presence.

A Note on Freshness
Roast level matters — but freshness matters more. All four of our roasts are whole bean, which means you grind them fresh before brewing and get the full flavour the roast was designed to deliver. Pre-ground coffee, regardless of roast level, goes stale quickly and loses the nuance that makes the difference.
